Greek Pasta Salad

Ingredients

  • 1 pack OSM Cheese Tortelloni 250g
  • 1 tomato seeded cut into chunks
  • 1/4 cucumber seeded cut in 1/4 moon slices
  • 1/2 green pepper cut into 2′ slices
  • 1/2 red onion cut into 2″ slices
  • 1 cup of black olives
  • 1/3 cup of feta crumbled
  • 3 TBS of olive
  • 1/2 TBS of red wine vinegar
  • 1/2 TBS of fresh lemon juice
  • 1 clove of garlic
  • 1 tsp of dry oregano

Preparation

  • Mix the olive oil, vinegar, lemon juice, garlic and half the oregano in a bowl and whisk it together
  • Cook the pasta for 4 minutes, strain, and refresh in cold water. Strain and put in a large bowl. Add the vinaigrette and mix.
  • Add the chopped vegetables and gently mix. Season with salt and pepper.
  • Transfer to the serving plate.
  • Top with the crumbled feta and sprinkle the balance of the dry oregano on top
