Mediterranean Tortelloni Salad

ingredients

Preparation

  • 1 pack of OSM Cheese Tortelloni 700g
  • 2 cups of assorted cherry tomatoes halved
  • 1 cup of red peppers sliced into 2″ strips
  • 1 cup of yellow peppers sliced into 2″ strips
  • 1 cup of orange peppers sliced into 2″ strips
  • 1 cup of red onions sliced into 2″ strips
  • 1 cup of zucchini cut into thin quarter moons
  • 6 – 7 artichokes quartered
  • 1 cup of black olives
  • 1 1/2 cups of Genoa salami cut into strips
  • 1 1/2 cups of sharp provolone cheese grated
  • Vinaigrette
  • Fresh black pepper to taste

For the Vinaigrette

  • 1/3 cup of olive oil
  • 1/8 cup of red wine vinegar
  • Juice from 1/2 lemon
  • 1/2 tsp of lemon pepper
  • 1/2 tsp of dry oregano
  • 1 tsp of salt

preparation

  • Prepare the vinaigrette and set aside
  • Boil the tortelloni for 4 minutes.
  • Carefully strain and refresh in cold water.
  • Strain again and put in a large bowl.
  • Pour the vinaigrette on the pasta and mix until all the pasta is coated
  • Add the peppers, onions, and zucchini and stir until everything is mixed
  • Add the tomatoes, artichokes, olives, salami and cheese, and gently stir until everything is mixed.
  • Plate and serve
