Mediterranean Tortelloni Salad

Ingredients

Preparation

  • 1 pack of OSM Cheese Tortelloni 700g
  • 2 cups of assorted cherry tomatoes halved
  • 1 cup of red peppers sliced into 2″ strips
  • 1 cup of yellow peppers sliced into 2″ strips
  • 1 cup of orange peppers sliced into 2″ strips
  • 1 cup of red onions sliced into 2″ strips
  • 1 cup of zucchini cut into thin quarter moons
  • 6 – 7 artichokes quartered
  • 1 cup of black olives
  • 1 1/2 cups of Genoa salami cut into strips
  • 1 1/2 cups of sharp provolone cheese grated
  • Vinaigrette
  • Fresh black pepper to taste

For the Vinaigrette

  • 1/3 cup of olive oil
  • 1/8 cup of red wine vinegar
  • Juice from 1/2 lemon
  • 1/2 tsp of lemon pepper
  • 1/2 tsp of dry oregano
  • 1 tsp of salt

Preparation

  • Fill a large saucepan with water, put the lid on and bring to the boil over a high heat.  Add the Tortellini.
  • Add tortellini to the water and Cook the for 4 minutes.
  • Drain them in a colander, rinse them with a little cold and drain again.
  • Pour the Tortelloni in a bowl.

 

Vinaigrette:

  • In a small bowl mix the pesto with olive oil, vinegar, salt and a little pepper.
  • Add all the ingredients to the bowl of Tortelloni: tomatoes, mozzarella cheese, olives, cucumber and basil leaves.
  • Pour in the vinaigrette and mix everything together.
  • Serve and enjoy
